Figs are not just for newton cookies anymore. This Mediterranean fruit is rich in calcium and fiber, and enjoyed fresh to satisfy a sweet craving, or turned into a jam. Change it up and make a salad using this savory recipe.

 

Ingredients

2 tablespoons red wine vinegar
2 teaspoons extra virgin olive oil
¼ teaspoon black pepper, ground
2 cups fresh figs, quartered
2 cups Romaine lettuce
1 cup cherry tomatoes, halved
¾ cup Vidalia onions (or other sweet onion), chopped
3 tablespoons      mint, chopped
¼ cup feta cheese crumbles

 

Method of Preparation

1. Whisk red wine vinegar, olive oil and black pepper in bowl.

2. Add figs, lettuce, tomatoes, onion and mint to oil and vinegar mixture. Toss gently.
3. Serve and sprinkle with feta cheese.
