Are you stuck in a chicken rut? Preparing the same old chicken recipes can get boring. It’s time to wake up your chicken with this new recipe that includes fresh basil leaves and vine ripe tomatoes. And take it a step further, this recipe is wonderful hot and also can be served cold on a bed of mixed greens.
|1 tablespoon||extra virgin olive oil|
|1 tablespoon||balsamic vinegar|
|¼ cup||red onion, chopped|
|3 cups||tomatoes, diced|
|2 cloves||garlic, minced|
|1 tablespoon||basil leaves, chopped|
Method of Preparation
1. Whisk together the olive oil, balsamic vinegar, salt and pepper.
2. In a large bowl, toss the chopped onions, tomatoes, garlic, basil, and oil and vinegar mixture together. Let mixture marinate for at least 10 minutes.
3. Grill chicken on medium heat until fully cooked.
4. Spoon tomato mixture on top of chicken and serve.

Yield: 4 servings
