Coat a pan with non-stick cooking spray. Sauté celery and onions as well as other cubed veggies such as carrots, mushrooms and even water chestnuts until soft. Combine this mixture in a bowl with cubes of whole-grain, high fiber bread, your favorite herbs and low sodium chicken broth. Place this in a casserole dish coated with non-stick spray and bake. This flavorful and delicious twist on the traditional stuffing is low in fat and higher in fiber. Enjoy!
