Black Bean Chipotle Dip

If you are invited to someone’s home and you want to bring an appetizer, this smoky, spicy appetizer will surely be a hit! It can be enjoyed with your favorite cut up vegetables or high fiber crackers.




1 cup onion, peeled and halved
1 cup canned tomatoes, diced in juice
1 small jalapenos pepper, remove seeds
2 cups black beans, drained and rinsed
2 tablespoons    chipotle peppers with sauce
1 tablespoon garlic, ground
1 tablespoon cumin, ground




Method of Preparation

1. Place onion, jalapenos and tomatoes in food processor. Pulse for 2 minutes. Scrape sides of bowl to incorporate all ingredients together.

2. Add black beans, chipotle peppers and spices to food processor. Pulse for 5 minutes until well pureed.
