Black Bean Chipotle Dip

If you are invited to someone’s home and you want to bring an appetizer, this smoky, spicy appetizer will surely be a hit! It can be enjoyed with your favorite cut up vegetables or high fiber crackers.
|1 cup||onion, peeled and halved|
|1 cup||canned tomatoes, diced in juice|
|1 small||jalapenos pepper, remove seeds|
|2 cups||black beans, drained and rinsed|
|2 tablespoons||chipotle peppers with sauce|
|1 tablespoon||garlic, ground|
|1 tablespoon||cumin, ground|
Method of Preparation
1. Place onion, jalapenos and tomatoes in food processor. Pulse for 2 minutes. Scrape sides of bowl to incorporate all ingredients together.
2. Add black beans, chipotle peppers and spices to food processor. Pulse for 5 minutes until well pureed.

Yield: 6 servings
