Garlic Chicken with Zesty Zucchini

Zucchini, or summer squash, can be cooked in many different ways. It is easy to prepare, and can take on a variety of flavors. This vegetable is also a good source of folate, an important B vitamin. Deficiencies of this can lead to anemia or neural tube defects in pregnancy. So throw this recipe together for a healthful, colorful summer dinner.   



1 pound chicken breast
1 ½ cups zucchini, sliced
2 tablespoons extra virgin olive oil
2 tablespoons   Parmesan cheese, grated
2 cloves garlic, chopped


Method of Preparation/Instructions

1. Mix chicken with 1 tablespoon olive oil and garlic. Toss to coat.

2. Cook chicken over medium heat for 5-7 minutes, or until cooked through. Remove from skillet.

3. Heat 1 tablespoon oil and cook zucchini until tender, about 5 minutes. Add chicken back in.

4. Toss mixture with Parmesan cheese and serve.
