Fast and Tasty Stir Fry

Getting tired of the typical dinners? Here is a recipe that is fast and tasty. The combination of peanut butter, soy sauce, ginger and garlic will wake up your taste buds.
If you want to use fresh vegetables, that is absolutely fine. You can make this recipe your own by substituting beef and broccoli for the first two ingredients. If you prefer shrimp, try using that with a variety of peppers and pea pods.
|1 small||boneless skinless chicken breast|
|1 cup||Asian frozen viegtable mix|
|¼ cup||purple cabbage, shredded|
|2 tablespoons||natural creamy peanut butter|
|2 tablespoons||soy sauce|
|¼ teaspoon||fresh grated ginger|
|1 clove||garlic, grated|
|¼ teaspoon||sesame seeds|
|salt and pepper, to taste|
Method and Preparation
1. Spray a small skillet with nonstick cooking spray and heat on medium high.
2. Cut chicken breast up into bite sized chunks, season with salt and pepper, and add to skillet. Sear chicken until cooked through, then add the frozen vegetables and cabbage. Continue cooking until vegetables are tender but crisp. While stir fry is cooking, whisk the remaining ingredients together in a small bowl, adding a little hot water to smooth the mixture to a honey-consistency. Toss the sauce with the stir fry.
3. Sprinkle with sesame seeds
4. Serve and enjoy on the fly!
