Pomegranate Avocado Dip

Imagine the slightly sweet and tangy taste of pomegranate mixed with feta cheese. Now add some avocado and this dip is sure to be a crowd pleaser. The lime adds flavor and helps to preserve the beautiful green color of the avocado. This unique blend of ingredients results in a fresh flavor to liven up a party.
Have fun with this dip by serving it with cut up raw vegetables or pita chips. Make it fancy by placing a small amount on brioche toasts.
Ingredients
4 whole | zucchini, chopped and rosted |
½ | red onion, diced |
½ | pomegranate, seeds only |
2 whole | avocados, cubed |
8 ounces | feta cheese, reduced fat |
2 tablespoons | lime juice |
1 teaspoon | salt |
1 teaspoon | pepper |
Method and Preparation
1. Dice zucchini and roast until sofened, then allow to cool.
2. In large bowl, combine zuchinni, onion, pomegranate sees, diced avocado, feta cheese, salt pepper and lime juice and mix well.

Yield: 10 servings
