A New Breakfast Twist

By Emily Thevis, RD LDN

Here is a spin on a classic breakfast to give your morning a bright start. Fresh blueberries grow from April through September, but frozen berries are a good alternative other times of year…like January!

Blueberries are naturally sweet.  They are also an excellent flavor enhancement. They are low in calories; while being rich in fiber, vitamin C and vitamin K.  Blueberries are also a rich source of anthocyanin; the antioxidant which gives them their color as well as contains powerful inflammation-fighting and cell-protecting properties.  Starting your morning with blueberries can give you a healthful edge.

1 cup  quick oats
2 cups water
1 cup blueberries, frozen
4 ounces light cream cheese
1 teaspoon cinnamon
to taste artificial sweetener

Method of Preparation

1. Mix oats, water, sweetener, cinnamon, and vanilla in medium saucepan.

2. Bring to a boil, then reduce heat and let thicken.
